Gwyneth Paltrow is no longer an actress in my eyes...she is a cook book author and a good one at that! I picked up her book 'Notes From My Kitchen table' from my local library and it is such a refreshing read. Gwyneth has a lovely, honest writing style and her book is filled with beautifully photographed, delicious looking recipes with some snippets from her life and close relationship with her father.
Gwyneth doesn't eat red meat so most of the recipes that do contain meat include duck, poultry and seafood. She places an emphasis on organic, un-processed foods and fuss free cooking. I have found this book to be very family friendly and she encourages involving children in the cooking process and enjoying your meals together, as a family.
I have only made one recipe from it so far and I wanted to share my version of it, as it was very tasty and went down well with the kids.
CORN FRITTERS
Adapted from Notes From My Kitchen Table
1 x 400gm can of corn kernels
1/4 cup of plain flour
1 1/2 tsp cornflour
1 egg, beaten
35gm parmesan cheese, grated
1/2 cup cheddar cheese, grated
1/4 tsp sea salt (fine crystals)
Black pepper (to taste)
Mix all ingredients together until well combined in a bowl. Heat some olive oil (approx 3 to 4 tablespoons) in a non-stick frying pan set on a medium to high heat. Scoop spoonfuls of the mixture (it will look like the mix will separate...but mine turned out fine) into the frying pan in batches. Fry each fritter on each side for around 2 minutes or until they turn a nice dark brown.
Drain the fritters on paper towel and keep warm while you fry the remainder of the mixture. These make a lovely side dish or I can see myself making these as a snack for the kids on weekends.
I would like to try some capsicum in these next time and perhaps some grated zucchini and carrot would be nice too. I will try a few more recipes from this book and let you know how they turn out!

Now I have a question for you...
I decided that I wouldn't buy paper towel ever again after my current roll ran out. I have done this before...but always lapse back into buying it. Thankfully I had one last roll left, hidden away (sort of) so I could drain these fritters. I barely cook anything that needs draining, so I figured one roll of paper towel could last me more than a year if I kept it just for this purpose.
But I would like to know if any of my readers have any suggestions of other products/ways you can use to drain/absorb oil from food?
